Pizza Crust from Shredded Chicken & Parmesan Cheese

Craving pizza but cutting back on grains? This chicken parmesan pizza crust has you covered! Packed with protein, it’s a delicious way to satisfy your pizza cravings while keeping things grain-free.

Ingredients

  • 2 medium chicken breast
  • 2 tsp avocado oil
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 egg
  • 1/4 cup grated parmesan

Directions

  • Preheat 400°F. Lay out chicken breasts onto baking sheet.
  • Drizzle over the avocado oil and sprinkle the chicken with salt and pepper.
  • Bake until just cooked through but not dry—20 to 22 minutes.
  • Remove from baking sheet and add to a bowl, dump excess juice. Allow chicken to cool slightly then shred with two forks. Remove excess juice by pouring out and/or patting dry with a paper towel.
  • Increase oven temp to 500°F.
  • Add cheese and egg to the bowl with shredded chicken and mix.
  • Pour mixture onto a pizza pan lined with parchment paper, brush will oil or crust will stick . Place another parchment paper on top and flatten out to the shape of a pizza.
  • Bake the crust for 8-10 minutes at 500F.
  • Remove crust from oven. Add desired toppings and bake for another 6-10 minutes at 500F. Toppings will rule final cooking time.
  • Remove from oven and allow to cool for a few minutes. Enjoy!

  • Whatever pizza toppings that are calling to you: Marinara pizza sauce, mozzarella, pepperoni, mushrooms, green bell pepper, anchovies, pineapple, olives, sausage, onion, etc. (Not included in the nutritional value below).
